This Blackberry RolyPoly is a delightful dessert that captures the sweet and tart flavors of blackberries in a comforting, homey dish.
6 cups blackberries
1 cup sugar
1/2 tsp salt
1 recipe Shortcake dough
2 Tbsps butter, melted
Preheat the oven to 425.
Butter and 8 x 10 inch pan.
Combine the berries, sugar, and salt in a bowl and toss very gently to mix. Set aside.
Roll the shortcake dough into a rectangle 1/2 thick and brush with the melted butter.
Spread half the berries over the dough.Roll up like a jelly roll and put into the pan, fold side down.
Put the rest of the berries around the roll.
Bake for 30 minutes.
Serve this with vanilla ice cream or whip cream!
You may also substitute any other berries for the blackberries.
