Blueberry Bread Muffins
“Mamas Gordon loved this Blueberry Bread and requested it for every Gordon beach week.”
Preheat the oven to 350
Grease and flour two 9 x 5 loaf pans or use large muffin pans with foil baking cups.
1 cup (2 sticks) butter, softened
2 cups sugar
1 tsp vanilla
3 cups plus 2 Tbsp flour, divided
1 tsp salt
1 tsp cream of tartar
1/2 tsp baking soda
8 oz lemon yogurt
rind of 1 lemon, grated
2 cups fresh blueberries
1 cup chopped pecans or walnuts, optional
In a large bowl cream butter, sugar and vanilla until fluffy.
Add eggs one at a time, beating well after each addition.
In a medium bowl sift together 3 cups of flour, salt, cream of tartar and baking soda.
In a small bowl combine yogurt and lemon rind. Mix well.
Add yogurt mixture and flour mixture to creamed butter mixture alternately ending with yogurt mixture.
Dust the blueberries with 2 Tbsp of flour.
Stir the blueberries into the batter.
Pour the batter into the 2 prepared loaf pans.
Bake loaves for 50 - 55 minutes or until cake tester comes out clean.
When to make this
