Blueberry Bread Muffins



“Mamas Gordon loved this Blueberry Bread and requested it for every Gordon beach week.”

Blueberry Bread

Preheat the oven to 350

Grease and flour two 9 x 5 loaf pans or use large muffin pans with foil baking cups.


Ingredients

  1. 1 cup (2 sticks) butter, softened

  2. 2 cups sugar

  3. 1 tsp vanilla

  4. 4 eggs

  5. 3 cups plus 2 Tbsp flour, divided

  6. 1 tsp salt

  7. 1 tsp cream of tartar

  8. 1/2 tsp baking soda

  9. 8 oz lemon yogurt

  10. rind of 1 lemon, grated

  11. 2 cups fresh blueberries

  12. 1 cup chopped pecans or walnuts, optional

Directions

  1. In a large bowl cream butter, sugar and vanilla until fluffy.

  2. Add eggs one at a time, beating well after each addition.

  3. In a medium bowl sift together 3 cups of flour, salt, cream of tartar and baking soda.

  4. In a small bowl combine yogurt and lemon rind. Mix well.

  5. Add yogurt mixture and flour mixture to creamed butter mixture alternately ending with yogurt mixture.

  6. Dust the blueberries with 2 Tbsp of flour.

  7. Stir the blueberries into the batter.

  8. Pour the batter into the 2 prepared loaf pans.

  9. Bake loaves for 50 - 55 minutes or until cake tester comes out clean.


When to make this
