Chicken Kabobs

Fantastic for grilling out on a warm evening.

Chicken Kabobs with Vegetable Skewers


Ingredients

For the Marinade

  • 1 - 6 oz can of pineapple juice

  • 1/2 cup soy sauce

  • 1/4 cup vegetable oil

  • 1 tsp dry mustard

  • 1 Tbsp brown sugar

  • 2 tsp ground ginger

  • 1 tsp garlic salt

  • 1/4 tsp pepper

  • 2 lbs boneless chicken breasts, cut into 1 inch cubes

For the Vegetable Skewers

Note: You can use anything you like on the vegetable skewers. I have listed some of my favorites.

  • Italian Dressing

  • Cherry tomatoes

  • Sweet Onion Chunks

  • Fresh Baby Bella Mushrooms

  • Red Pepper

  • Fresh Pineapple chunks

Directions

  1. Combine all the marinade ingredients. Marinate the chicken cubes for at least 1 hour.

  2. Skewer the chicken chunks on several skewers.

  3. Skewer the vegetables on several skewers and brush with Italian Dressing.

  4. Grill the chicken at 350 for about 20 minutes turning often.

  5. Grill the vegetable skewers for about 15 - 20 minutes turning often.

Serve with Fried Rice. I like Trader Joe's Vegetable Fried Rice found in the frozen section. I add a can of sliced water chestnuts to the fried rice and sauté in the wok with some Tamari Soy Sauce.
