Grilled Chicken with Country Ham and Provolone Cheese

The country ham and provolone make this grilled chicken a delight to eat. I love using the cold leftovers on my salads for lunch.

Grilled Chicken with Country Ham and Provolone Cheese

A pound of boneless skinless chicken breasts makes plenty for 4 people.


  • 1 lb boneless skinless chicken breasts, cut in half and pounded thin

  • 1/2 lb country ham

  • Sliced Provolone cheese

  • Salt and Pepper

  • Splash of sherry.


  1. Cut the chicken breast almost in half and fold open like a book.

  2. Place the chicken breast in between 2 sheets of plastic wrap and pound to about 1/4 inch thickness. Repeat with remaining chicken breasts.

  3. Place country ham slices and provolone cheese on one half of the chicken and fold the other half over the ham and cheese.

  4. Sprinkle with salt and pepper.

  5. Grill at 350 approximately 15 minutes a side or until internal temperature is 165.

  6. Splash with sherry when you take it off the grill.

Serve with sautéed spinach and garlic and a baked sweet potato.
