Me Matt's B'Bcue Chicken
My Father was from Emporia, Virginia and called his grandmother Me Mat (Mattie Cleveland Callahan) and this is her very old recipe for barbecue chicken.
A very old family recipe that creates some melt in your mouth chicken.
Me Matt's B'Bcue Chicken
Ingredients
1 whole chicken, cut in pieces or my favorite is a pack of chicken thighs.
½ cup (1 stick) unsalted butter, melted
¾ cup apple cider vinegar or lemon juice
1/4 cup water
1 1/2 Tsp salt
3 Tbsp sugar
1 1/2 tsp Tabasco sauce
Directions
Preheat the oven to 300.
Melt the butter and vinegar together.
Add the remaining ingredients making sure the salt and sugar dissolve.
Place the chicken in a 13 x 9 baking dish.
Pour the sauce over the chicken and bake covered with Reynold's wrap for 1 - 2 hours.
Remove the Reynold's wrap to brown.
