Me Matt's B'Bcue Chicken

My Father was from Emporia, Virginia and called his grandmother Me Mat (Mattie Cleveland Callahan) and this is her very old recipe for barbecue chicken.


A very old family recipe that creates some melt in your mouth chicken.

Me Matt's B'Bcue Chicken


Ingredients

  • 1 whole chicken, cut in pieces or my favorite is a pack of chicken thighs.

  • ½ cup (1 stick) unsalted butter, melted

  • ¾ cup apple cider vinegar or lemon juice

  • 1/4 cup water

  • 1 1/2 Tsp salt

  • 3 Tbsp sugar

  • 1 1/2 tsp Tabasco sauce

Directions

  1. Preheat the oven to 300.

  2. Melt the butter and vinegar together.

  3. Add the remaining ingredients making sure the salt and sugar dissolve.

  4. Place the chicken in a 13 x 9 baking dish.

  5. Pour the sauce over the chicken and bake covered with Reynold's wrap for 1 - 2 hours.

  6. Remove the Reynold's wrap to brown.
