Sauted Spinach, Mushrooms and Feta

This is an easy, quick side dish that is tasty and good for you!

Sauted Spinach, Mushrooms and Feta


  • 2 Tbsp Olive Oil

  • 1 - 2 tsp chopped garlic

  • 1 lb sliced portabella mushrooms

  • 12 - 16 ounces fresh Spinach

  • salt

  • Feta cheese


  1. In a saute pan or wok, bring enough water to boil add the spinach and par boil for just a couple of minutes.

  2. Drain the spinach.

  3. In the saute pan, add the olive oil and heat to shimmering.

  4. Add the chopped garlic and stir quickly until just about browning.

  5. Add the mushrooms and cook until desired tenderness.

  6. Add the cooked spinach and toss with the mushrooms.

  7. Add salt to taste.

  8. Remove from heat and crumble feta on top.
