Chipotle Pimento Cheese

I make this Chipotle Pimento Cheese after I make the Broccoli Cheddar Quiche because I have the cheddar cheese left over. Therefore, the ingredients I list below are with the leftover cheddar cheese log.

Make your Pimento Cheese unforgettable. You won't be able to get enough of this one.

Chipotle Pimento Cheese


  • about 3 cups grated extra sharp cheddar cheese (I prefer Cracker Barrel Extra Sharp cheddar cheese).

  • 1 Chipotle Pepper, seeded - from a can of Chipotle Peppers in Adobe Sauce. The larger the pepper the more kick your cheese will have.

  • about 2 Tbsp chopped Pimentos, eyeball it

  • 4 splashes of Cholula Chipotle Hot Sauce

  • 1/4 cup Hellman's Mayonnaise (may need a touch more)


  1. Add all the ingredients together in a small bowl.

  2. Stir together until combined.

  3. Serve or store in the refrigerator, the flavors will be stronger the longer the cheese is stored.
