Broccoli and Cheddar Quiche



This is a fluffy, yummy quiche that you can eat for breakfast, lunch or dinner.

Broccoli and Cheddar Quiche


Ingredients

  • 5 large eggs

  • 2 cups half-and-hallf

  • ¼ tsp salt

  • ¼ tsp pepper

  • 4 ounces sharp cheddar cheese

  • 3 cups steamed broccoli

  • 1 Tbsp minced fresh chives

  • 1 recipe Easy Pie Crust, partially baked

Directions

  1. Adjust the oven rack to the lower-middle position and preheat oven to 350°F.

  2. Steam the broccoli until it is bright green and tender, about 3 minutes.

  3. Whisk the eggs, half-and-half, salt, and pepper together in a large bowl.

  4. Sitr in cheddar cheese and chives.

  5. Place the broccoli in the pie shell.

  6. Pour egg mixture into the pie shell.

  7. Bake the quiche until the top is lightly browned, center is set and a knife inserted comes out clean, about 40 - 50 minutes.

  8. Let quiche cool and serve warm.

I like to serve this with the Pineapple Banana Nut Muffins for breakfast or brunch and with a side salad or cup of Easy Chicken Soup for dinner.
