This is a really simple and super delicious strawberry pie.
1 9" pie shell baked
4 cups fresh strawberries, divided, 2 cups crushed, 2 cups halved
3 Tbsp cornstarch
¾ cup sugar
2 Tbsp lemon juice
In a saucepan crush 2 cups strawberries, cornstarch and sugar.
Cook stirring constantly, until mixture boils. Boil for about 2 minutes.
Cool slightly and fold in lemon juice and halved strawberries.
Pour into crust. Chill.
Serve with vanilla ice cream or whip cream or both!
