Homemade Tabbouleh is a bit time consuming but well worth it - so much better than store bought.
1 cup Bulgur
1 cup boiling water
3 cups finely chopped Italian flat parsley
1/4 cup finely chopped fresh mint
1/4 cup scallions
2 - 3 medium tomatoes, seeded and diced
1 medium cucumber, seeded and diced
1/2 tsp salt
1/4 tsp ground cumin
1/4 tsp ground black pepper
3 Tbsp lemon juice
3 Tbsp olive oil
Combine bulgur and boiling water and let soak for 1 hour.
Drain bulgur and place in a large bowl with parsley, mint, scallions, tomatoes, cucumber, salt, cumin, pepper and lemon juice and olive oil.
