Tabbouleh


Homemade Tabbouleh is a bit time consuming but well worth it - so much better than store bought.

Ingredients

  • 1 cup Bulgur

  • 1 cup boiling water

  • 3 cups finely chopped Italian flat parsley

  • 1/4 cup finely chopped fresh mint

  • 1/4 cup scallions

  • 2 - 3 medium tomatoes, seeded and diced

  • 1 medium cucumber, seeded and diced

  • 1/2 tsp salt

  • 1/4 tsp ground cumin

  • 1/4 tsp ground black pepper

  • 3 Tbsp lemon juice

  • 3 Tbsp olive oil

Directions

  1. Combine bulgur and boiling water and let soak for 1 hour.

  2. Drain bulgur and place in a large bowl with parsley, mint, scallions, tomatoes, cucumber, salt, cumin, pepper and lemon juice and olive oil.
