The Beach Week Chocolate Chip Cookies

Preheat the oven to 350 and prepare greased cookie sheets.


  • 1 cup (2 sticks) unsalted butter, room temperature

  • 1 cup packed dark or light brown sugar

  • 1 cup sugar

  • 2 large eggs

  • 1 Tbsp pure vanilla extract

  • 2 cups flour

  • 2 1/2 cups quick oats, ground in a blender or food processor

  • 1/2 tsp salt

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 12 ounces chocolate chips or dark chocolate chips

  • 1 cup chopped pecans (optional)


  1. Mix the butter, sugar, and brown sugar together.

  2. Add eggs one at a time.

  3. Add vanilla

  4. Blend the oats in a blender or food processor until they become a powder.

  5. In separate bowl, mix the oats, flour, salt, baking powder, and baking soda.

  6. Slowly add the dry ingredients to the butter mixture.

  7. Use a wooden spoon to stir in the chocolate chips and nuts.

  8. Loosely shape the dough into slightly smaller than golf ball size and place on a grease cookie sheet.

  9. In a conventional oven: Bake at 350 for 14 minutes - switching the cookies sheets top and bottom and rotating them front to back at the 7 minute point.

  10. In a convection oven: Bake 325 for 14 minutes or until golden brown.
