The Beach Week Chocolate Chip Cookies
Preheat the oven to 350 and prepare greased cookie sheets.
Ingredients
1 cup (2 sticks) unsalted butter, room temperature
1 cup packed dark or light brown sugar
1 cup sugar
2 large eggs
1 Tbsp pure vanilla extract
2 cups flour
2 1/2 cups quick oats, ground in a blender or food processor
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
12 ounces chocolate chips or dark chocolate chips
1 cup chopped pecans (optional)
Directions
Mix the butter, sugar, and brown sugar together.
Add eggs one at a time.
Add vanilla
Blend the oats in a blender or food processor until they become a powder.
In separate bowl, mix the oats, flour, salt, baking powder, and baking soda.
Slowly add the dry ingredients to the butter mixture.
Use a wooden spoon to stir in the chocolate chips and nuts.
Loosely shape the dough into slightly smaller than golf ball size and place on a grease cookie sheet.
In a conventional oven: Bake at 350 for 14 minutes - switching the cookies sheets top and bottom and rotating them front to back at the 7 minute point.
In a convection oven: Bake 325 for 14 minutes or until golden brown.
