Easy Chicken Soup

Quick, easy and delicious!
This recipe is so easy because you use a rotisserie chicken from the store and a few fresh vegetables and you are done!
Easy Chicken Soup
Ingredients
2 cups chopped chicken meat from a rotisserie chicken
2 Tbsp butter
1 cup chopped onion
1 cup chopped celery
1 Tbsp chopped green pepper (optional)
1 Tbsp minced garlic
6 cups chicken broth
2 chicken bouillon cubes
1/2 tsp thyme
1/2 tsp pepper
1 potato, diced
1 cup diced carrot
1 cup fresh or frozen cut green beans
1/2 cup light cream (optional)
Directions
In a large heavy bottom pot, saute the chicken in butter for 3 minutes.
Add in onion, celery, green pepper and garlic.
Saute for another 3 minutes.
Add broth, bouillon, thyme and pepper.
Bring to a boil.
Add potatoes, green beans and carrots.
Reduce heat and simmer for 20 minutes, or until vegetables are tender.
Remove from heat and stir in cream, if using.
