Quick, easy and delicious!

This recipe is so easy because you use a rotisserie chicken from the store and a few fresh vegetables and you are done!

Easy Chicken Soup


  • 2 cups chopped chicken meat from a rotisserie chicken

  • 2 Tbsp butter

  • 1 cup chopped onion

  • 1 cup chopped celery

  • 1 Tbsp chopped green pepper (optional)

  • 1 Tbsp minced garlic

  • 6 cups chicken broth

  • 2 chicken bouillon cubes

  • 1/2 tsp thyme

  • 1/2 tsp pepper

  • 1 potato, diced

  • 1 cup diced carrot

  • 1 cup fresh or frozen cut green beans

  • 1/2 cup light cream (optional)


  1. In a large heavy bottom pot, saute the chicken in butter for 3 minutes.

  2. Add in onion, celery, green pepper and garlic.

  3. Saute for another 3 minutes.

  4. Add broth, bouillon, thyme and pepper.

  5. Bring to a boil.

  6. Add potatoes, green beans and carrots.

  7. Reduce heat and simmer for 20 minutes, or until vegetables are tender.

  8. Remove from heat and stir in cream, if using.
