White Clam Sauce



This is an easy meal to make for a weeknight dinner that is so delicious. Serve it with a grapefruit avocado salad and toasted bread for dipping in the sauce. If you really want to up your game, make fresh pasta with the Kitchen Aide Pasta attachment.

White Clam Sauce


Ingredients

  • Pasta of your choice

  • 2 - 3 cans minced clams (found in the canned meat isle)

  • 1/4 cup butter/margarine

  • 1/4 olive oil

  • 3 cloves garlic

  • Bunch of Spring Onions chopped (about 1/2 cup)

  • 1/4 cup chopped parsley

  • 1/4 tsp oregano

  • 1/8 tsp pepper

  • extra bottle of clam juice if needed

  • splash of white wine (optional)

  • black olives (optional)

Directions

  1. Start the water boiling for your pasta.

  2. Drain the clams and reserve the clam juice.

  3. In a medium sized skillet or saucepan, heat the olive oil and butter.

  4. Add the garlic and onion and sauté until onions soften.

  5. Stir in parsley and oregano, sauté.

  6. Add reserved clam juice and cook until simmering, about 5 minutes.

  7. Add clams and continue to simmer until heated.

  8. Add white wine and extra clam juice if more sauce is needed.

  9. Add black olives and simmer until heated.

  10. Serve over pasta.
