Fried Oysters on Ritz Crackers

Just like the fried oyster appetizer from Country Club of Virginia


A crispy Fried Oyster, a dollop of homemade tartar sauce on a Ritz cracker is an absolutely mouth watering appetizer - oh so good!

Fried Oysters on Ritz Crackers

Use a large cast iron skillet for the frying and you just need enough oil for the oysters to float.


Ingredients

  • 1 pint oysters (about 30 -35 oysters)

  • 1 cup buttermilk

  • fresh thyme sprigs

  • 1 cup flour

  • 1 cup cracker meal

  • 1/4 cup cornstarch

  • 2 - 3 Tbsp Old Bay Seasoning (eyeball it in the mixture)

  • Lemon wedges

  • Pinch of salt

  • Vegetable oil for frying (about an inch deep)


Directions


Tip: To make sure the oil is ready. Throw a pinch of the flour mixture into the oil - it should sizzle if the oil is hot enough.

  1. Drain the oysters and marinate them in the buttermilk and thyme sprigs for 20 - 30 minutes.

  2. Prepare a plate or wire rack covered with paper towels for the draining of the oysters.

  3. Prepare the skillet with the oil to be heated over medium heat.

  4. Prepare a serving plate with Ritz crackers.

  5. In a bowl combine the flour, cracker meal, cornstarch, and Old Bay.

  6. Coat several oysters in the flour mixture and drop individually into the oil. You do not want the oysters to get stuck together.

  7. Fry for about 30 seconds, flip and fry for another 30 seconds.

  8. Remove to the paper towel covered plate or wire rack.

  9. Squeeze a lemon wedge over the oysters and a pinch of salt.

  10. Place a small amount of Homemade Tartar Sauce on top of the Ritz cracker and and oyster on top of the tartar sauce.
