A beautiful and delicious side dish.
Sliced Apples and Butternut Squash
1 butternut Squash
1 - 2 red apples
goat cheese (optional)
toasted chopped pecans (optional)
Preheat the oven to 425
Peel the neck of the butternut squash.
Cut the neck of the squash away from the bulb.
Slice the neck in halve and slice the halves in 1/2 moon slices about 1/4 inch in size.
Slice the apple in thin 1/2 moon slices.
Arrange the Squash and apple slices alternating each on an oven safe platter.
Drizzle the slices with maple syrup.
Bake the slices for about 40 minutes - use a fork to test for tenderness.
Remove the platter when done and sprinkle with goat cheese crumbles and toasted chopped pecans if desired.
